What To Cook With Ground Beef: Mexican Pizza

Mexican Pizza
(Recipe courtesy of my aunt, in our recently published family cookbook.)
1 pizza crust
1 lb ground beef
1 large onion, chopped
1 clove garlic, crushed
1 can refried beans (15 oz)
1 can diced green chiles, drained (4 oz)
1 jar Ortega mild taco sauce (8 oz)
2 cups shredded Monterey Jack or cheddar cheese

Heat oven to 450 degrees. Prepare pizza crust on a baking sheet, and bake for 5 minutes. Brown the ground beef, onion and garlic until cooked through. Drain, if necessary. Spread refried beans to the edge of baked crust. (I mix my beans with a little sour cream to make them more spreadable.) Layer meat mixture, taco sauce, cheese and chiles onto the beans. Bake for 18 to 20 minutes. Serve topped with lettuce, tomatoes, sour cream, olives, guacamole, or whatever your heart desires!

Total spent in February on groceries & household supplies: $170.55
Total saved in February on groceries & household supplies: $607.90 (78%)

We did great this month! Hmm - maybe it's because this month was 3 days shorter than usual? This total included some meat stock up during the great Winco sale (ground beef, pork, chicken, bacon). It also included a $10 donation to a family humanitarian project we'll be doing in 2 weeks. I think it also helps that The Bambina is now on whole milk (instead of soy), so we're much cheaper there. I also managed to stock up 3 packs of diapers this month. Score!


Total spent in February eating out: $49.01

I'm actually pretty pleased with this number. It's even $10 cheaper than last month! And we used our BOGO Chipotle coupon at the last second on the 28th. This month included a sushi night with my brother & sister-in-law and a trip to Barbacoa (full price!) when The Bambina & I were sick and the hubby was keeping us together.

I was really proud of my hubby -- he didn't eat out at work even once during February! We're going on a cruise in April with some friends, and we've been joking about being on "cruise diets." Maybe he's a little more serious about it than I thought! Either way, I'll take it. :)

What To Cook With Ground Beef: Swedish Meatballs

Dan's has fresh 80% lean ground beef on sale for $1.99/lb this week. This is a great price for ground beef. (It's $2.79/lb at Costco.)

A few weeks ago when Winco had a great price on ground beef, I talked with a few of my friends and discovered most of them didn't know what to cook with ground beef, so as a result they don't eat it or buy it often!

Since then, I've been preparing a few of my most favorite ground beef recipes to share with you and get you excited about cooking with ground beef. Without further ado....



Grandma Edna's Swedish Meatballs
(Recipe courtesy of my Scandinavian grandma, who was an amazing cook.)


4 lbs ground beef
2 packages Lipton Onion Soup
1/2 cup dry minced onion
3 eggs
1 1/2 cups cornflake crumbs
2/3 cup cornstarch
3 tsp salt
2 tsp pepper
1 can evaporated milk

1. Blend all ingredients thoroughly in a large mixing bowl.


2. Roll into balls and brown in margarine or butter. (I use a cookie scoop to get them uniform.)



3. Layer on a sheet cake pan. Add 1-2 cups of water into the bottom of the pan and bake at 375 degrees for 30-45 minutes.


Variations: You can also hold out one package of Lipton soup and sprinkle it on top just before baking. (I choose to mix it inside because they freeze better this way.) You can also sprinkle 1/2 package of Knorr Pepper Sauce on top before baking.

When I make this recipe, I get about 80 meatballs and freeze them in batches of 20. That way I can get 4 meals per recipe. I serve them over teriyaki rice, make them into spaghetti & meatballs, or in a crockpot topped with BBQ sauce as an appetizer. They're so versatile and so delicious! Enjoy.

CSN Stores Review

I got the chance a few weeks ago to do a review for CSNstores.com. I had a hard time choosing an item, because they carry so much! Ultimately I chose a white noise machine -- the Sound Spa from Homedics.


The Bambina is a super light sleeper. I've heard from other moms that this is common with a first child, because they are used to the house being quiet while they sleep (since there are no other siblings). She such a light sleeper that I can't do dishes, blowdry my hair or even open the front door while she sleeps. So I thought a sound machine might be able to help me be more productive while she's napping!

I'd read some reviews on various sound machines, and most of the baby ones said the main complaint was that they don't go loud enough. So far I have LOVED the Homedics Sound Spa. It has plenty of volume! I only turn it up about a quarter of the way, and it's plenty loud. Plus it has six sound choices (rain, heartbeat, ocean, summer night, waterfall and rainforest). They are all very natural and soothing sounding, but I use the rain most frequently because in my opinion, it has the least amount of distracting noises in it. (It's most consistent.) The Sound Spa also has a timer, so you can set the machine to turn off when your little one falls asleep. I don't use this feature because my daughter doesn't have trouble falling asleep (...it's the staying asleep that's tricky). But I could see it being a useful feature for others.

So the big question is -- does it work? So far, I think so! I've been able to do some dishes and cooking the last few weeks without The Bambina waking up prematurely, which is great. I feel much more productive, and I know she's getting the sleep she really needs! I'd definitely recommend this Sound Spa if you're looking for a white noise machine.
