Make Ahead Mashed Potatoes

Need some ideas on what to do with your 15 pounds of potatoes that you got this week at Associated Foods for $1.50? Here's a fabulous idea, taken from Fix, Freeze, Feast. (I got it for Christmas a year ago and love it.)


Garlic Mashed Potatoes
(Makes 4 side dishes, 6 servings each)

Ingredients:
10 lbs russet potatoes, peeled and cut into large chunks
1 Tbsp olive oil
2 Tbsp minced garlic
2 8-ounce packages cream cheese, cut into quarters
1 tsp salt
1 tsp black pepper
1 cup chicken broth
4 8-inch square baking dishes
plastic wrap
aluminum foil

Directions:
1. Put potatoes in a large stockpot, cover with water, bring to a boil and cook until tender (9 to 12 minutes).
2. Meanwhile, heat oil in small skillet over medium heat. Add garlic and cook, stirring occasionally, until soft, about 3 minutes. Remove pan from heat.
3. Drain potatoes and return to pot. Add garlic mixture, cream cheese, salt and pepper. Mash potatoes. Stir in chicken broth. Divide potatoes evenly among the baking dishes. Wrap each dish entirely in plastic wrap and cover with foil.
4. Label and freeze.

Cooking Directions:
To cook one side dish from frozen, bake for 1 hour at 350 degrees. To cook one thawed side dish, bake for 30 minutes at 350 degrees.

I ran to Target this afternoon to pick up some infant Tylenol (we had our two month shots today which were no fun!). While I was there I stumbled across a pretty good deal on Shout, which is on temporary price cut to $2.50.

Have I mentioned here that the only pre-wash spray I can find that gets the yellow mustard poop out of white onesies is the Shout Advanced Gel? True story. (Aside from bleach, which I avoid if I can.) I've tried Oxy Clean, Zout, Spray 'n Wash, and regular Shout. The Shout Advanced definitely works the best.

I've discovered that in addition to laundry detergent, I've also been going through laundry spray like crazy. (The only pre-wash spray I've found that gets the yellow mustard poop out of white onesies is this Shout Advanced Gel spray!) I had my free Huggies voucher from the B5G1 promo last fall that I needed to use up. When I got to the register, the cashier scanned the Living More card, which took an additional 10% off my purchase, which was awesome! (I guess it's a card for those 60+ and it takes 10% off purchases on Tuesdays. So it was my lucky day!) I'm going to buy 2 more Shout's in other transactions and then submit for this $5 rebate as well. So it's nearly a money-maker!
