Make Ahead Mashed Potatoes


Need some ideas on what to do with your 15 pounds of potatoes that you got this week at Associated Foods for $1.50? Here's a fabulous idea, taken from Fix, Freeze, Feast. (I got it for Christmas a year ago and love it.)


Garlic Mashed Potatoes

(Makes 4 side dishes, 6 servings each)

Ingredients:

10 lbs russet potatoes, peeled and cut into large chunks
1 Tbsp olive oil
2 Tbsp minced garlic
2 8-ounce packages cream cheese, cut into quarters
1 tsp salt
1 tsp black pepper
1 cup chicken broth
4 8-inch square baking dishes
plastic wrap
aluminum foil

Directions:
1. Put potatoes in a large stockpot, cover with water, bring to a boil and cook until tender (9 to 12 minutes).
2. Meanwhile, heat oil in small skillet over medium heat. Add garlic and cook, stirring occasionally, until soft, about 3 minutes. Remove pan from heat.
3. Drain potatoes and return to pot. Add garlic mixture, cream cheese, salt and pepper. Mash potatoes. Stir in chicken broth. Divide potatoes evenly among the baking dishes. Wrap each dish entirely in plastic wrap and cover with foil.
4. Label and freeze.

Cooking Directions:
To cook one side dish from frozen, bake for 1 hour at 350 degrees. To cook one thawed side dish, bake for 30 minutes at 350 degrees.
