Cafe Rio - It's What's For Dinner

In case you couldn't tell from the groceries, here is what I'm making tonight.

Cafe Rio Pulled Pork
5-6 lb Pork roast
1 Tbsp Cumin
1 c. Brown sugar
1 12 oz. Can of Coke
1 12 oz. Bottle of Red Taco Sauce

Put the pork roast in the crockpot and fill halfway up with water. Cook on low for 12 hours. Remove meat from crockpot, remove fat, shred, and return to crockpot. Add all other ingredients and cook on low for another 2-4 hours.


Cafe Rio Creamy Tomatillo Dressing
3 Tomatillos
1 c. Mayonnaise
1/2 c. Buttermilk
1 c. chopped cilantro
1 package Buttermilk Ranch Dressing Mix
1/4 tsp. Cayenne Pepper
2 cloves crushed garlic

Husk, wash, and cut tomatillos into quarters. Blend all ingredients in the blender until smooth. Refrigerate at least 1 hour before using.


Salsa Fresca
3 Vine-Ripened Tomatoes
1/2 c. Cilantro, chopped
1/2 Onion
3-4 Jalapeno Clices
Salt, to taste
Lemon juice, to taste

Wash tomatoes and cilantro. Coarsely chop large ingredients and then mix all ingredients in the cuisinart. Serve with chips.

All You Grocery Challenge Progress

I went to Sam's Club and Smith's yesterday to do a little grocery shopping for the week. Here's how I've fared so far.

Dear Santa...

Does anyone else's husband have a hard time coming up with birthday and/or Christmas gift ideas? I'm throwing hubby a bone with this one today.

Behold. The item currently at #1 on my wishlist:


I saw this the other day when we were at Home Depot. Sometimes it feels like we live there. But on this particular occasion, we were back by the wood blinds when I stumbled upon it. Isn't it a beaut? It's basically an upright freezer chest with 8.8 cubic feet of glorious frozen space inside.

Why, oh why is a freezer on my wishlist, you ask? Oh, the possibilities! I got THIS recipe book for Christmas last year and I love it. However, I never have enough room in my freezer to really use it regularly. I love the idea of once-a-month cooking and freezing meals. I also love being able to buy frozen foods in bulk when I find a good sale. Like you don't already know that.

In short, I think this freezer could actually save our family money. And the best part? Look how much it costs to run per year...

(This is Chris's biggest beef with buying a 2nd freezer. He let Utah Power haul away the old freezer we inherited with our house because it was a power hog.)

Thirty-nine dollars per year!?! I think I'm in love.

Yesterday I went by the Albies by my work on my way home. I wanted to pick up some Dial as well as some bagels, because we were running out. The dial was out of stock, so I grabbed a bag of bagels and headed to the self checkout.

When I got to self checkout, they rang up incorrectly so I called an associate over an
d after double-checking, he agreed they were ringing up incorrectly when they should be on sale. I said "so that means I get them for free, right?" He said "no, I'll just fix the price." I know Albies, Smith's and Walmart all have a scan-rite policy so I said "oh, well last time I was here they gave me the item free when it rang up incorrectly." He said, "oh, really? I'll go check." Sure enough, they had to give them to me free. It never hurts to ask!
