Cafe Rio - It's What's For Dinner

In case you couldn't tell from the groceries, here is what I'm making tonight.

Cafe Rio Pulled Pork
5-6 lb Pork roast
1 Tbsp Cumin
1 c. Brown sugar
1 12 oz. Can of Coke
1 12 oz. Bottle of Red Taco Sauce

Put the pork roast in the crockpot and fill halfway up with water. Cook on low for 12 hours. Remove meat from crockpot, remove fat, shred, and return to crockpot. Add all other ingredients and cook on low for another 2-4 hours.


Cafe Rio Creamy Tomatillo Dressing
3 Tomatillos
1 c. Mayonnaise
1/2 c. Buttermilk
1 c. chopped cilantro
1 package Buttermilk Ranch Dressing Mix
1/4 tsp. Cayenne Pepper
2 cloves crushed garlic

Husk, wash, and cut tomatillos into quarters. Blend all ingredients in the blender until smooth. Refrigerate at least 1 hour before using.


Salsa Fresca
3 Vine-Ripened Tomatoes
1/2 c. Cilantro, chopped
1/2 Onion
3-4 Jalapeno Clices
Salt, to taste
Lemon juice, to taste

Wash tomatoes and cilantro. Coarsely chop large ingredients and then mix all ingredients in the cuisinart. Serve with chips.

OMG...i LOVE this place! I gasped out loud when I saw this in my blogger feed. How did you come up w/ these recipes?? Their tomatillo dressing is what gets me coming back each time (and their wheat tortillas). Thank you so much for posting this!

Lol, I love Cafe Rio too. I forgot they have them in Vegas, that's so great! I got the tomatillo dressing recipe off the internet somewhere ages ago, and my mom got the pork recipe from someone else who got it from someone else... But both of the recipes are really good - I swear the dressing is like THE ACTUAL recipe. You HAVE to try it!

Whenever I make the dressing, we eat it for dinner with the cafe rio getup, and then my hubby uses the entire rest of the bowl of dressing as tortilla chip dip. Fattening, I know, but he's addicted. :)
