Frugal Freezer Meals with Winco

Here's a great freezer meal idea using the 10 lb bag of russet potatoes for $0.68 from Winco this week! By my calculations, if you buy all ingredients at Winco this week -- your final price will be about $0.24/serving. Hello frugal meal! Why wouldn't you make this as to have on hand in your freezer!?!

Baked Potato Chowder

(Adapted from Fix, Freeze, Feast)
Makes 4 entrees, 6 servings each


10 lbs russet potatoes, baked and cooled
1 cup butter (2 sticks)
2 cups chopped onion (about 2 medium)
1/4 cup dried parsley
2 Tbsp beef boullion granules
1 Tbsp minced garlic (about 9 cloves)
1 Tbsp dried basil
2 tsp salt
2 tsp black pepper
2 cups all-purpose flour
12 cups water
4 cups half-and-half (or light cream)
1 lb Cheddar cheese, cut into large chunks
4 one-gallon freezer bags, labeled

  1. Cut potatoes in half; scoop out flesh. Set potato aside and discard skins, or save as potato skins snack.
  2. Melt butter in a large stockpot over medium heat. Add onions and cook, stirring, until soft, about 5 minutes. Add parsley, boullion, garlic, basil, salt, and pepper; cook, stirring, for 2 minutes. Add flour; cook, stirring, 2 minutes longer. Mixture will be like a paste. Gradually add water, half-and-half, and potato; cook, stirring frequently, until soup has thickened, about 30 minutes. Add cheese; cook, stirring, until melted. Cool.
  3. Divide cooled soup evenly among the freezer bags. Seal and freeze.

To Cook One Entree:
  1. Completely thaw one entree in the refrigerator.
  2. Bring the soup to a simmer in a large saucepan over medium heat. Do not boil.

Utah Food Co-Op: March Share

If you live in Utah and you've never tried The Community Food Co-Op of Utah, you should! I placed an order in March and picked it up last Saturday at my local site.

This month's standard share ($24) included:

  • 2lb. Top Sirloin Fajita Strips
  • 2 lb. Package of Chicken Thighs
  • 1 lb. Lean Ground Beef
  • 1 lb. Pork Country Style Boneless Spare Ribs
  • 9 Fuji Apples
  • 9 Oranges
  • 1 Red Leaf Lettuce
  • 2 Heads Broccoli
  • 2 Bunches of Green onionO
  • 2lb. Bag of Carrots
  • 1 lb. Strawberries
  • 1 lb. Mushrooms
  • 10 lb. Russet Potatoes
What a deal! The retail value was $46 + tax for the standard share. I also added in 1 lb package of bacon for $1.50 and a package of Colossimo's sausage for $3.50. We've already eaten the bacon (which was awesome - definitely ordering that again), and tried a lot of the produce. It's all wonderful!


How does a food co-op work?
Co-ops have a rotating menu with different food packages or shares that you can purchase each month. You pay the co-op for your desired share and then pick up your food at your neighborhood distribution center on the day of the co-op. So simple!

How does the co-op provide food at such low prices?
By ordering in quantity and utilizing local farmers/growers.

Who can join?
Anyone! If you eat, you qualify.

Is the food good quality?
The food comes from the same wholesalers that supply the local grocery stores, so you can expect the same quality. No seconds or bruised items here. It's all fresh, excellent food.
